I am in Alaska visiting my daughter, Beth. We had a bunch of organic bananas slightly passed their prime so we began looking for a good recipe for banana bread (my recipes, alas, were thousands of miles away!). The recipes we found online all called for sour cream which we didn’t have, so we decided to experiment with some Fage Greek yogurt we had in copious quantity. This turned out so yummy, I had to share!

Greek Yogurt Banana Loaf
Preheat oven to 350 degrees
1 cup sugar
1/2 cup butter
7 ounces Greek yogurt
1 tsp vanilla extract
1 + 1/2 cups unbleached flour
1 tsp baking soda
1/2 tsp salt
2 mashed bananas (about a cup)…organic if available 🙂
1/2 cup pecans or walnuts, if desired
Cream together sugar, eggs & butter. Mix in vanilla, yogurt, baking soda & salt. Mix in flour in about 4 additions. Peel bananas & add in either by mixing or mashing into batter. Chunks are ok if you like pockets of banana.
Pour into a greased 8×8 or glass loaf pan & bake from 45 minutes to an hour or until loaf is brown and a knife or toothpick inserted in center comes out clean.
